About Christine
Dr. Christine Dickson is not only a self-taught vegan baker dedicated to her craft but also is a licensed psychologist who understands the emotional, psychological, and social impact of becoming a vegan.
Christine feels passionately about vegan baking; that's why she volunteered to teach these classes. As Christine says, "When I gave up dairy and eggs three years ago, family and friends repeatedly told me that I would never enjoy great desserts again. I immediately set out to prove them wrong. I purchased every book I could find on vegan baking and also searched the Internet for recipes. However, I quickly became discouraged when I produced one average or below average dessert after the other. I was looking for “great” not average. As a result, all my non-vegan friends and family would laugh and say, “I told you so.”
So then I embarked on a new journey in an effort to re-invent vegan baking. I forced myself to think outside the box, to throw away everything I ever knew about baking. I no longer followed recipes. I conducted experiments, something I was well suited for as a trained researcher. My test sample became my non-vegan friends and family. I forced them to taste every new creation until one day they said, “this dessert is great!” Later came the most exciting comments, “this dessert tastes better than the original,” and “this can’t be vegan it is too moist and rich.” Although I still have thousands of desserts to re-invent, I am ready to share my kitchen-tested secrets with you."
