Butano Camping 2003

Our 3rd vegan camping trip for the summer was our annual sojourn to Butano to create a weekend vegan villiage. Thanks to Team Apple and Team Banana, this was indeed a gourmet vegan camping trip. Some considered it an outdoor Vegan Food Party! The quality of the food during our trip (all prepared at the campsite, except for the desserts which were homemade in advance) was phenomenal.

Friday dinner: chummus with melba toast, dolmas, mystery baba ghanouj with pita, green dip with veggie sticks, orange soup, olive tapenade with bread, bruschettas, garden salad with goddess dressing, and to top it all off -- mousse cake with fresh raspberries

Saturday breakfast: tofu scramble, mochi, fruit salad, baked beans, blueberry muffins

Saturday lunch - sandwich bar with chreese, deli slices, tomatoes, avocado, onions, sprouts, mushrooms, basil, and some baked goodies, banana cake and cookies

Saturday dinner: fresh guacamole with corn chips, veggie sticks and homemade ranch style dip, gazpacho soup, soft taco / burrito bar (seitan, refried beans, portabello mushrooms, red bell and jalapeno peppers, onions) with choice of corn or whole wheat tortillas, and raspberry bars

Sunday breakfast: whole wheat pancakes with fresh bananas or fresh strawberries, sausages, and fruit salad
