I love to eat!!!!
And I love to talk/write, so ... THIS IS THE PURRRRR-FECT forum for me!
What do I eat?
This is constantly changing, of course.
But I do get on certain kicks, where I will eat the same thing for awhile. Then I switch to something else.
Lately for breakfast I've been having:
* VEGGIE FIVE JUICE DRINK ... it's fresh squeezed tomatoes, celery, beets, carrots, and parsley, from a deli shoppe that is right on my way to the train station as I walk to work in the morning (on Sutter St between Montgomery and Kearny)
* A Heart Thrive (aka California Suncakes) Vegan Energy Bar (2 little heart-shaped cakes), made with oats, soy, and dried fruits, also from that same deli shoppe.
Another thing I commonly have for breakfast is a FRUIT SMOOTHIE. I only put fruit in it. I use a banana, pure cranberry juice, ice, and whatever other WHOLE FRUITS I have on hand (peaches, apples, oranges, blueberries, strawberries, kiwi, nectarines, etc). When I eat fruit, I eat it first thing in the morning, for breakfast, and I don't eat anything else afterwards. In fact, if I eat all that fruit for breakfast, I'm not usually hungry again until after 12 noon.
During lunch, I go for a run. When I come back, I eat at my desk. Lately I've been having a leafy green salad with avocado, onions, and green/red peppers (also from that deli shoppe). Plus some dried soup from Whole Foods or Rainbow. I buy it in bulk and mix together the split pea, lentil, black bean, and corn chowder varieties. I keep the dried soup in a big bag at my desk. Then, all I have to do is pour some in my coffee mug (I don't drink coffee, so it's really a soup mug), walk over to the hot water dispenser & add water; then wait a few minutes and POOF! LUNCH IS SERVED! Sometimes I also make oatmeal in the same way (then it's an oatmeal mug) or I go pick up the 3-bean salad from the deli near my work.
When I get home, I don't typically have any time to cook. As a result, what I often eat is frozen vegetables heated up in the microwave, along with some kind of veggie burger chopped up and mixed in. Then I add sauces to the mixture, like barbecue sauce, Goddess dressing, raspberry chipotle sauce, whatever strikes my fancy.
Another kick I've gotten into lately is SANDWICHES made with just bread, pickles, spicy barbecue sauce, and sauerkraut, if I have it. OH MY GAW! These sandwiches are so tasty and so addictive!!!! I LOVE THEM.
Another thing, sometimes I get corn tortillas, heat them up on a non-stick pan (NO OIL NEEDED). Then I fold the tortilla over like a taco and stuff it with leafy greens, tomatoes, and barbecue sauce. Incredibly easy and incredibly yummy.
Sometimes for dessert I make a smoothie with hemp milk (could be soy or rice milk but I like hemp milk better), peanut butter, a banana, cocoa powder, and chocolate extract. HIGH CALORIE, BUT OH SO DELICIOUS!
Yeah, so that's what I've been eating lately. As you can see, it's not hard to be vegan. The foods I eat are pretty much available everywhere. And they require almost ZERO TIME TO COOK.
