Hi, I'm looking for vegan cookbooks that have delicious and simple recipes. Can anyone recommend any?

My very favorite easy cookbook, and it has delicious reicpes, is The Peaceful Palate by Jennifer Raymond.

I actually have close to 100 vegan cookbooks. There are many out there.

I suggest that you also check out a site such as Amazon or www.goodreads.com and go to stores with a good selection of vegan cookbooks and read reviews/look at the cookbooks. You can tell by looking at the recipes in a cookbook whether the skill level required is ok with you and how tasty the recipes will be as well.
