I started this forum so I guess I should post
My title reflects my life and how full it is and how I do need to make sure my vegan food choices fit my lifestyle.
It was an overcast day today, so I decided to make soup today, a corn chowder soup. This is one of my favorite soups because it tastes great, is simple to make AND it uses bay leaves, and it's so neat to go to my front yard and pluck the leaves fresh from my tree.
The soup is basically sauteed onion and celery, then add potato & corn & water.. cook it .. add soy or rice milk, some flour as a thickener and it's done. The potato and flour give it a nice creamy texture, and the flavor of the vegetables need only a little bit of salt, paprika, and the bay leaves to make it delicious. Actually got this recipe in a cookbook pamphlet from Imagine Foods (c) 1991. |

that sounds excellent. my mother would suggest the irritating process of straining out half of the vegetables and liquifying them in a blender (immersion blender is nice for this too) to increase the creaminess
however nice this may be for the overall presentation, i don't have the patience to do that kind of stuff.
i bet this is best when the corn is very sweet, and you still get a burst of sweetness when you bite the kernels
regarding busy lives, the slow cooker is my best pal in that regard
i wake up 15 minutes early and throw a bunch of stuff in the slowcooker, set it on low, and come back to dinner after work |

I travel a lot from work and its rather difficult for me to cook each day so I'm not a vegan of a perfect conduct But a came across a site where I found local restaurants

and last time I traveled I managed to find a small vegan restaurant with an excellent lady chef not far from my destination. I'll try to find more of them, wherever I go. |

You might also want to check out happycow.net. You can check by location and they list only vegan/vegetarian and vegan/vegetarian friendly places. You might have excellent luck with them as well. They have member reviews also. |
