I've been unable to find locarb meatless recipes for me to use. Being diabetic, and because of the carbs in corn, wheat and beans, I have to limit my intake of these. Advice and suggestions would be appreciated.

Hi, Timothy.
I would recommend that you read what Dr. McDougall has to say on the subject. He has many informative books and tapes, many with info on diabetes and diet, none of them low carb. I can't begin to intelligently state why he would tell you not to go low carb, but you can also send him a message and he will answer it personally. His website is [url]DrMcDougall.com[/url]. On the website, you can find back issues of his newletters, some of which I'm sure must have addressed diabetes.

There is also a vegetarian cookbook called "Low-Carb Vegetarian: Meatless alternatives for popular low-carb diets" by Margo DeMello (published by Book Publishing Company).
FYI - I haven't tried any of the recipes, but looking quickly through the book, they also appear to be vegan.
Additionally, I searched on Amazon.com for the words 'low-carb vegetarian' and three cookbooks appeared, the one that I already knew about plus two others.
