|Over the course of a Labor Day weekend camping trip, my fellow campers and I indulged (totally satiated) with a variety of foods.
Mexican theme -- appetizer of tortilla chips with fresh guacamole, follwed by a hearty tamale pie and for dessert, a homemade berry cobbler
breakfast choices included fruit salad, chocolate chip muffins, oatmeal
lunch was a sandwich bar with all the fixings you could imagine - fresh heirloom tomatoes, onions, lettuce, hummus, deli slices, avocado, sauerkraut with a quinoa vegetable salad on the side and homemade chocolate chip oatmeal raisin cookies.
dinner was an Indian curry with tempeh, cauliflower, celery, potatoes, yam, carrots, and peas in a coconut-based sauce with a spicy tamarind chutney and a collard/squash/date sautee, with chai cupcakes for dessert
breakfast was berry pancakes, tofu scramble, fresh-baked corn muffins, and fruit
