Hi,

I have been a vegetarian for 8 years now and recently made the transition to being a vegan. I am traveling to Chicago and Dallas this summer to visit relatives. "Meat and potatoes" are cornerstones of both groups' diets. While they've tolerated my no meat stance in the past, I usually ended up eating side dishes. Now my restrictions have become more demanding. In these families, you show your love by feeding someone and I know this will make them uncomfortable. Any suggestions on how I can make these trips less stressful?

So what if you did just that. i.e. Bring your favorite cookbook and do some cooking for your family while you're on vacation. This would accomplish two things: 1) give your relatives some tasty examples of vegan foods and 2) allow you to enjoy more than just the side dishes

For example, I've got corn pone baking in the oven right now. What is that? Well, 3 cans of seasoned beans (I'm using baked beans) with a cornbread mixture (corn meal, soymilk, vinegar, salt) on top. With a green salad on the side, topped with my favorite dressing, that's a quick and simple meal right there.

Here's the recipe for my favorite salad dressing - I actually put it in my blog so I wouldn't lose it Wink

You might also find the book by Carol Adams Living Among Meat Eaters to be useful in strategies for coping as a veg*n with meat-eaters. She suggests avoiding talking about gruesome details of eating meat over dinner.
