Instead of Eggs

How much animal suffering, fat, cholesterol and salmonella do you want in your diet? If you’re looking for lots of those special ingredients, I have the perfect food for you: An egg. If, however, you’d like to avoid ingesting ickiness and heart-attacks-in-a-shell, I have some recipes for you.

– Scramble Seasoning Mix
– Eggless Egg Salad

– Cranberry Oat Cookies

10 years ago, when I went vegan, it was harder to give up eggs. Now it’s almost as easy as replacing milk with soymilk!

For your old breakfast standby: Tofu scramble.
Picnic lunches: Tofu egg salad.

Desserts: Too many recipes to list! Vegan baked goodies used to be bland, tough and stale the minute they came out of the oven. We’ve learned a lot in the last decade and now vegan treats are just as good as the egg-and-butter gobs we all used to love.

I’ve included a couple of baked goods below, but if you have a sweet tooth, I would suggest:

All vegan, all delicious. One of my very favorite cookbooks.

Ener-G egg replacer is helpful when you’re converting old-fashioned recipes to vegan recipes. However, you can skip using Ener-G as long as you replace the fundamental parts of an egg: Fat, Moisture and Leavening. Both recipes below use a natural, vegan fat instead of egg fat; water instead of egg moisture, and baking soda or powder for leaving.

Scramble Seasoning Mix
Make a big batch and keep in your cupboard. If you’re eating less tofu these days, mix the seasoning with potatoes and vegetables and scramble that—yum!

2 and 2/3 cup nutritional yeast

2 Tb onion powder
2 Tb paprika
1 tsp celery seed
1 Tb turmeric
3 Tb salt
1 tsp pepper
–Mix and store in a sealed container. Keeps indefinitely.

–General use: Mix 4 Tb of this mix with 1 block of Mori-Nu silken tofu and 1 block of fresh, firm tofu. Saute with your favorite veggies. Serve with toast, homefries, fakin’ bacon and of course, lots of coffee with Silk soy creamer. Taste before serving—some people prefer a stronger seasoning, if so, just add an extra tablespoon.

Eggless Egg Salad

If you want a lower-fat recipe, substitute mashed, cooked white beans for the tofu.

Chop finely:
1 red onion
2 sweet pickles

In a large bowl combine:

Onion and pickles from above

2 blocks firm tofu
1 and ¼ tsp turmeric
2 and ½ tsp dry mustard powder
3 Tb lemon juice
½ cup Veganaise or Nayonaise
¼ cup nutritional yeast

1 and ½ tsp salt
½ tsp pepper

Serve as a dip or a sandwich filling.

Two baked goodies to choose from, one with chocolate and one without:

Makes 1 cookie sheet

2 cups all-purpose flour
1 cup cocoa powder
1/2 Tb baking powder
1/2 tsp salt
1 cup sugar

1 cups maple syrup
1 cup canola oil
1 cup soymilk

Add dry to wet, mix gently, bake at 350 degrees for 15 minutes.

Cranberry Oat Cookies

1 cup Earth Balance
1.5 cups sugar

Beat until creamy.


1/3 cup warm water

Mix again until fluffy and creamy.

Mix dry ingredients:

1.5 cups barley flour (or regular white flour)
1/2 tsp baking soda
1/2 tsp salt

Add to sugar base and mix


3.5 cups oats
1 cup chopped pecans
1 cup dried cranberries
1 tsp orange extract

Bake at 350 degrees until golden brown.
